The Edible Forest is looking incredible and absolutely beyond my expectation. The growth this year has been phenomenal.
Whilst I am very lucky to wonder through this amazing Forest every day, having an Edible Forest does have its challenges from standard gardens. The growth is prolific, some plants do well in certain areas and some struggle. We are dictated by the garden as it often ‘shows us’ what it needs and therefor it has created its own micro -climate, it is after all a living infrastructure.
My favourite tree in the Edible Forest is the Linden tree (Tilia Cordata). People do not realise the leaves are edible. I cannot walk past this tree without picking a few leaves, when I do my scavenge in the garden to collect my greens for my salad. It is so good for you too – the leaves can assist with high blood pressure and can reduce nasal congestion as well as sooth a sore throat. It definitely beats the Iceberg lettuce!
Next weekend we are hosting our open day and I would be delighted to share my favourite tree and all the other amazing plants in the Forest with you. We are so pleased the Global Gardens of Peace Foundation is teaming up with us on the day also. I am so proud to be part of this incredible Foundation that creates gardens for vulnerable communities not only in Australia, but also overseas.
